Rescue dog adjustment period - how long?

Adopted my first rescue dog 2 weeks ago and shes still very nervous. Barely eating, wont play, just hides in her crate most of the day.

I know theres an adjustment period but getting worried. How long did it take for your rescue to come out of their shell?
