Beagle nose work - how to channel the sniffing?

My beagle wants to sniff EVERYTHING on walks. What should be a 20 minute walk takes an hour because he has to smell every blade of grass.

Thinking about getting into nose work or scent training to give him an outlet. Anyone done this with their beagle? Where do I start?
